Antalya cuisine: piyaz, hibeş and Yörük traces
According to the Antalya Provincial Directorate of Culture and Tourism, Yörük traditions merge with Mediterranean coastal culture in Antalya's cuisine; Arab culinary heritage was added with migrants arriving from Crete in 1924, bringing sesame and garlic to the table. The Directorate's recipe list contains more than twenty dishes such as Antalya Piyazı, Antalya-style pumpkin dessert, Hibeş, Gülüklü soup, Yörük kebab, flour halva and bitter-orange jam; the cuisine rests on plant-based eating. The Culture Portal defines Antalya piyaz as a bean dish with tahini sauce: eaten as a salad elsewhere, in Antalya it is a main course, distinguished by its sauce of tahini, garlic, rock salt, lemon and vinegar and by its small-grained dried beans; Çandır beans were used in the past. Hibeş is tahini beaten with garlic, cumin, red pepper, salt and lemon juice to the consistency of boza, served both as a meze and as a sauce.
